The ingredients needed to make Zarda Pulao:
  1. Make ready 120 grams basmati rice
  2. Get Orange food colour
  3. Make ready Kesar
  4. Get Dry fruits
  5. Take Sugar as per taste

  8. Make ready Ghee
  9. Get 1 bay leaf,
  10. Get 1 dried red chilli
  11. Take 2-3 cloves,
  12. Prepare 2 elaichi
  13. Get 1 cinnamon stick
  14. Take 3 tbsp cold milk

Zarda pulao / meethe chawal , kesar bhaat or sweet rice is a popular dish of South Asia. Zarda is a Hyderabadi dessert made especially during Eid and other Muslim festivals and marriages. Afghani zarda pulao is a famous dish from the Afghani cuisine. In that case, you would find Afghani zarda pulao an extremely appealing dish.

Instructions to make Zarda Pulao:
  1. Wash the rice and soak it in water for a about 15 mins. Now take 3 tbsp of milk in a cup and add few kesar strands to it & keep it aside. Now take a pan and pour some water. As the water comes to a boil, add half tsp of food colour and add in the soaked rice. Now boil the rice till 80%
  2. Strain the rice. Take a pan, add 3 to 4 tbsp of ghee, fry some dry fruits & keep it aside. Now in the same pan add the bay leaf, dried red chilli, cloves, elaichi, cinammon and let them splutter a bit, add in the rice along with the dry fruits. Add some salt and 4 tbsp sugar and kesar milk to it. Cover it and let it cook in a low flame for about 12 to 15 mins and you are done.
