  1. Make ready 1 cup rice soaked in water for 1 hour

  6. Take 4 green cardamoms, peel them
  7. Get 1/2 cup milk

Zarda pulao / meethe chawal , kesar bhaat or sweet rice is a popular dish of South Asia. Zarda is a Hyderabadi dessert made especially during Eid and other Muslim festivals and marriages. Afghani zarda pulao is a famous dish from the Afghani cuisine. In that case, you would find Afghani zarda pulao an extremely appealing dish.

Instructions to make Zarda Pulao:
  1. Take a vessel fill with almost 1-litre water. Turn on the flame.
  2. Add food colour to the water. Cover the vessel & let the water boils. Once the water boils add the soaked rice. Cover the vessel, check the rice after 5 mints, keep it 80% cooked.
  3. Stir the rice at regular interval, when 80% cooked, turn off the flame & strain them.
  4. Take a heavy pan, turn on flame & let it heat add ghee, then add cashew, almond, coconut julienne roast it slightly. Take out a bit of dry fry to use later for garnishing.
  5. Then add cardamom seeds, cloves, slightly roast. Add rice, then add 3/4 cup sugar & milk.
  6. Cover and cook the rice on low flame for 10 minutes. Then turn off the flame.
  7. Cover & keep the pulao for 10 mins, then serve it.
  8. Yummy & aromatic pulao is ready. Garnish the pulao with some dry fruits.
  9. You can store Zara Pulao & relish it for 3 days.
