  1. Poner a cocer la patata con la piel. Una vez cocida dejar atemperar, pelar y chafar.
  2. En el vaso de la tmx añadir el azúcar + la piel del limón. Pulverizar velocidad 5-7-9 y añadir la almendra molida y la patata hervida y chafada. Mezclar todo 7seg velocidad 6
  3. Formar una bola con la masa y dejar reposar en temperatura ambiente 1 día.
  4. Al día siguiente formar los panellets.
  5. Separaremos la clara de la yema. Batiremos la clara hasta que empiece a espumar y rebozaremos las bolas de los panellets que rebocemos con almendra. Es decir, haremos la bolita, mojaremos con la clara y rebozaremos con la almendra a dados (si los hacéis con piñones no hace falta pasarlos por la clara ya que se pegan mejor sin ésta).
  6. Una vez acabados todos los panellets los pintaremos con la yema de huevo que habremos diluido 4 gotitas de agua.
  7. Hornear calor arriba y abajo 200 grados 8-10min (depende del horno) id vigilando que no se os quemen por abajo.
