- Cocer el boniato, cuando esté hecho quitar el exceso de agua con una servilleta y dejar enfriar, más tarde chafar de con un tenedor.
- Para la masa: Juntamos la harina de almendra, con el boniato y el azúcar, amasamos con las manos hasta que esté todo bien mezclado, tiene que salir una mezcla homogénea.
- Para los de piñones y almendra: Vamos haciendo bolitas de tamaño pequeño y ponemos por fuera los piñones o las almendras troceadas apretando un poco para que se enganchen.
- Para los cacao: extendemos la mitad de masa que queda, ponemos el cacao en polvo (en mi caso he puesto Colacao) volvemos a amasar para que se mezcle y hacemos las bolitas.
- Para los de café: Hacemos lo mismo que los de caco.
- Ponemos todos los panellets en una bandeja, los barnizamos con huevo batido y al horno a 170° hasta que estén dorados. Los sacamos y dejamos enfriar.
