  1. Cocer la patata y cuando esté blanda, pelarla y chafarla con un tenedor.
  2. Mezclar la patata con el azúcar, la almendra, la ralladura de limón (al gusto)y una clara de huevo. Mezclar bien primero con el tenedor y después con las manos mojadas.
  3. Dejar reposar unas horas aunque no es imprescindible. Yo hago la masa de un día para otro
  4. Hacer bolitas del tamaño de una nuez con las manos mojadas en agua.
  5. Y rebozar las bolas en piñones o granillo de almendra o coco. E ir colocandolas en una bandeja de horno forrada de papel vegetal
  6. Calentar el horno durante 15 minutos a 250 °
  7. Pintar los panellets con la yema de huevo
  8. Cocer en el horno a media altura unos 3-4 minutos. Apagar el horno y dejadlos dentro unos 10 minutos. Han de quedar tostaditos pero blanditos por dentro.
  9. Dejad enfriar y bona castanyada!!
