- Cocer la patata. Una vez a punto retirar y pelar. Hacer un puré, mientras esté caliente. Dejar enfriar.
- En un bol añade la almendra molida, el azúcar y la patata(ya chafada) y movemos todos los ingredientes para que se incorporen todos juntos.
- Ya tenemos la masa lista para preparar panellets. Para trabajar la masa y dar forma a distintos panellets hayvque empolvarse las manos con harina para evitar que se pegue, la masa a las manos.
- Panellets piñones: 60 gr de piñones, 1 huevo. (Salen 10) coger trozos de masa y hacer bolitas pequeñas, pasarlas por la clara de huevo y cubrirlas de piñones. Pintarlos por encima con yema huevo.. colocar bandeja.
- Panellets coco: 60 gr coco yema huevo. (10 panellets) mezclar misma cantidad de masa y coco rallado(no en peso, sino en volumen, ejemplo: una cucharada sopera de masa y otro coco) una vez mezclado, coger bolas de masa y darles forma pirámide y rebozarlas con coco por encima, por debajo con Harina. Pintar la punta con yema de huevo. Colocar en bandeja.
- Panellets de Almendra: 80gr de almendra granillo clara huevo (10panellets) con masa hay que hacer unas pequeñas barritas rectangulares. Pasar por la parte de arriba por la clara de huevo y rebozar con el granillo de almendra. La parte de abajo, rebozarla con harina. Colocar en la bandeja.
- Temperatura horno (225-250) de 8 a 10 minutos.
