  1. Preparare l'impasto inserendo le farine in una ciotola con il sale e l'olio evo. Iniziare a mischiare.
  2. In un pentolino intiepidire l'acqua e mettere a sciogliere il lievito di birra.
  3. Aggiungere l'acqua e il lievito all'interno della ciotola con le farine e iniziare a impastare fino ad ottenere un impasto morbido ed omogeneo.
  4. Coprire con pellicola ed uno strofinaccio umido e mettere a riposare in un luogo buio e asciutto (io uso il forno), fino a lievitazione ottenuta (più riposa e più è digeribile).
  5. Preparare i friarielli mettendo a scaldare in una padella l'olio evo e facendo rosolare lo spicchio d'aglio che una volta imbrunito verrà asportato. Aggiungere i friarielli lavati e mondati e far cuocere per circa 10 minuti aggiungendo del peperoncino, la colatura di alici e il zest di lime. Far raffreddare.
  6. Tagliare a dadini la provola silana.
  7. Stendere l'impasto lievitato in una teglia precedentemente oleata e iniziare a farcire mettendo prima i cubetti di provola silana, i friarielli raffreddati, le olive taggische e infine la ricotta di bufala d piccoli tocchetti.
  8. Infornare in forno preriscaldato a 180 gradi per 20 minuti circa.
  9. Controllarensemla parte inferiore dell'impasto risulta dorata, tagliare e servire!
