- L’impasto va preparato la sera prima, ore 18:00. Mettere in planetaria l’acqua e il lievito. Aggiungere metà delle farine e mescolare finché non si otterrà una crema liscia. (La stessa operazione può essere fatta anche a mano). Mescolare per 3 minuti. Aggiungere il sale e mescolare altri tre minuti. Quindi aggiungere l’altra metà della farina e continuare a mescolare.
- Mettere l’impasto sul piano di lavoro e lavorarla con le mani qualche minuto. Fare riposare l’impasto per 20 minuti coprendolo con un canovaccio bagnato. Lavorare nuovamente qualche minuto e far riposare altri 10 minuti coprendo con lo stesso canovaccio. Lavorare l’impasto un’ultima e farlo riposare altro 5 minuti.
- Dividere l’impasto in tre parti formando delle palline, farle riposare una decina di minuti e poi riporre in frigo fino al giorno dopo alle ore 14:00. L’impasto deve continuare a lievitare fuori dal frigo fino alla sera.
- Alle ore 19:00-20:00 stendere la pasta con le mani avendo cura di non schiacciare mai il bordo con le mani. Scaldare la padella sul fuoco e preriscaldare la pietra lavica in forno accendendo il grill alla massima potenza.
- Porre l’impasto della prima pizza in padella e cuocere 2 minuti. Condire la pizza con pomodoro origano e mozzarella e infornare per 4 minuti. Condire con un giro d’olio e basilico fresco. La pizza è pronta. Chiaramente può essere farcita con tutti gli ingredienti che si preferisce!
