  5. Fai lievitare l'impasto in una terrina ampia. Accendi il forno a 28°. Lascia l'impasto a lievitare per circa 6 ore, nel forno spento.
  6. Una volta trascorso il periodo di prima lievitazione, prendi l'impasto e dividilo in 4 palline. Falle lievitare nel forno spento per 2 ore.
  7. Terminata la seconda lievitazione, versa un po' di farina su una teglia e posavi l'impasto. Inizia ad espandere l'impasto su una teglia per pizza. Partendo dal centro, spingi l'impasto verso i bordi con le dita, finché il centro non si assottiglia ed i cornicioni s'inspessiscono.
  8. Condisci la pizza con due cucchiai di salsa ed un cucchiaio di olio EVO.
  9. Accendi il forno ventilato a 230°. Cuoci per 6 minuti. Poi sforna la pizza ed aggiungi mozzarella, olive snocciolate, acciughe e capperi. Riduci la temperatura del forno a 220° e cuoci per altri 10-15 minuti, finché il cornicione non è ben cotto.
